Meet The Chef

As a child I recall sitting on a stool in the kitchen, watching my grandmother share her own chef expertise, teaching me the joys of cooking. My grandmother started the first May family catering business. I enjoyed preparing and serving dishes with my family for many catering events. These experiences helped develop my love for cooking and desire to turn foods that most people “hate,” into delicious recipes they would crave more of.

 

I am a 2016 graduate of the Respond Culinary Program. I enrolled in the Respond Culinary Arts program in 2015. This experience changed my life. Meeting the culinary instructor, Chef Shawn Harris, was "love at first sight," in his eyes. His energy, excitement, humor, intelligence and ability to make each person feel present in the room caught my attention. I've been in several classes of all types but this one gave me a new respect for being "eagerly excited to become more." Chef made cooking seem easy and very doable. Which by graduation, you realized it wasn't so hard after all. He not only taught culinary techniques, but he gave life lessons. He encouraged us to be strong and courageous. Honest and loving, on time and accountable for what we agreed to achieve to the final day.

From a dishwasher, to an apprentice chef, to now being a certified chef, I have embarked on my own journey in the culinary field. I cater a variety of events including parties, weddings, graduations, grand openings, and more.  I was most recently named Executive Chef of Kingdom Outreach Church, Audubon, NJ, where I regularly attend, and actively serve God and my community.

Award Wining Recipe

Tia's Fried Chicken w/ a Spicy Coconut Drizzle

Ingredients:

  • 1 chicken (cut into pieces)

  • 1/4 c. Salt

  • 1/4 c. Black Pepper

  • 1/4 c. Garlic Powder

  • 1/4 c. Onion Powder

  • 1/4 c. Cayenne Pepper

  • Vegetable Oil

  • All Purpose Flour

 

Directions:

  • Mix dry seasonings to taste.

  • Season chicken with dry seasoning mix to taste

  • Let marinate 6 or more hours

  • Toss in flour

  • Heat Vegetable oil medium high heat

  • Fry chicken until golden brown

 

Ingredients for Spicy Coconut Drizzle Sauce:

  • 1 c. Coconut Palm Sugar

  • 1 c. Water

  • 1 tsp. Spicy Seasoning mix (Secret Ingredients)

 

Directions:

  • Add water, spicy seasoning and sugar in a small saucepan over medium-high heat until reduced to 1/3 cup whisking frequently until thickens

  • Drizzle spicy sauce over chicken and serve
